I tested dozens of apple crumble recipes before finding THE perfect one. The secret to a successful crumble lies in three points:

A perfect butter/flour/sugar ratio: too much butter and your pastry will be compact, not enough and it will be dry. My recipe respects the ideal balance for achieving that characteristic sandy texture.

The secret to a perfectly crunchy crumble pastry is to work the cold butter and not overmix. You should get a texture that resembles coarse breadcrumbs, with irregular small pieces.

Work quickly with your fingertips to avoid melting the butter with the heat from your hands. Some use a mixer, it's possible, but be careful not to mix for too long: pulse until you achieve a sandy texture.

The mistake to avoid: pressing the pastry on top of the apples. Instead, generously crumble it leaving crevices and bumps. This is what gives that delightful uneven crunch in your mouth.

Gourmet variations of the apple crumble

Once you master the basic recipe, have fun experimenting with:

Speculoos version: replace 50g of flour with speculoos powder in the crumble pastry

Apple and pear crumble: mix 400g of apples and 300g of pears

Apple and strawberry crumble: add 100g of frozen strawberries to the apples before crumbling the pastry

Oat version: replace 30g of flour with oat flakes for more texture

    Prepare the apples: peel them, remove the cores and cut them into quarters that aren't too thin (approximately 8 quarters per apple). Drizzle with lemon juice to prevent browning.

    In a skillet, melt the 30 g of butter and sauté the apples with the 30 g of sugar for 5 minutes over medium heat. They should just begin to lightly color. Add the cinnamon if using.

    Pour the apples into the baking dish and let cool slightly.

    Prepare the crumble dough: in a mixing bowl, combine the flour, sugar and pinch of salt.
