Why properly storing your bakery items is crucial
The proper storage of your baked goods is not only about freshness, but also food safety and flavor preservation. Improper storage can lead to:
- Rapid degradation of textures
- Significant loss of flavor
- Development of potentially harmful microorganisms
- Avoidable food waste
Storage of bakery items by category
1. Cakes and mousses
Optimal storage duration: 2-4 days in the refrigerator
Cakes based on cream, such as strawberries or operas, are particularly sensitive and should be stored in the refrigerator between 2°C and 4°C. To preserve their texture and prevent them from drying out:

- Use a cake dome for whole cakes
- For portions that have been cut, apply food wrap directly to the cut surface
- Take them out 30 minutes before serving to fully develop their aromas
Pro tip: Fresh fruit cakes last less long (maximum 48 hours) than those based on ganache or butter cream.
2. Viennas and dried bakery items
Optimal storage duration: 2-3 days at room temperature
Croissants, chocolate croissants and other viennas are best kept in a:

- At room temperature (18-20°C)
- Away from moisture and direct sunlight
To regain their crunch after one or two days, bake them for 2 minutes in a preheated oven at 150°C.
Tips: Never use the refrigerator for viennas! Cold accelerates the drying of the dough.
3. Mousse and creams
Optimal storage duration: 24-48 hours in the refrigerator
These delicate preparations require special care:

- Store them in an airtight container

For chocolate mousse: Its storage duration varies depending on its composition. A mousse with raw eggs should not be stored for more than 24 hours, while a cooked mousse can last up to 3 days.
4. Macarons and small bakery items
Optimal storage duration:

- Macarons: 3-5 days in the refrigerator, up to 1 month in the freezer
- Dry small bakery items: up to 2 weeks in a sealed container
For macarons, the refrigerator is ideal, but some fillings (like lemon) can soften the shell more quickly. The best option is to store them in a sealed container with layers of parchment paper separating them.
Important: Macarons are best enjoyed at room temperature. Take them out 30 minutes before serving.
