White chocolate milkshake base
Milkshakes are quick, easy and so good that I wonder why I don't make them more often! Because it's simply a mixture of ice cream and milk blended in a blender (and you can even add toppings). It's super refreshing, but also quite nourishing for a good Sunday afternoon snack. During my turbine trials, I'd made a white chocolate ice cream (for which I haven't given you the recipe, by the way), and I wanted to make a change from the plain old ice cream. So I decided to use this base (which is a little killer in both custard and ice cream, by the way) to make a white chocolate milkshake. I made life difficult for myself by making the ice cream myself, but you can of course use any store-bought ice cream (and skip to step 2 of the recipe). I won't go on and on about how to make it, because it's so simple: for one person, you mix half a liter of ice cream with a large glass of milk and blend it all together (I warned you it was nutritious!). White chocolate ice cream
- 500 mL whole milk
- 5 egg yolks
- 10 g sugar
- 1 teaspoon vanilla extract
- 125 g white chocolate
White chocolate milkshake
- 1/2 L white chocolate ice cream
- 1 glass of milk
- 1 large handful of M&M's
- 10 cL chilled 30% liquid cream

The day before, crush the white chocolate into small pieces and make the custard. Remove from the heat, pour the hot cream over the chocolate and stir until smooth. Strain and leave to cool.
When the cream is cold, use an ice cream maker or turbine to make the ice cream.
White chocolate milkshake
Blend a handful of M&M's in the blender.
Add ice and milk. Blend until smooth. Pour into a cocktail glass.
Whip the cream until stiff. Pipe into a piping bag and poach on top of the glass. Sprinkle with M&M's.
