Originally I had planned to share a classic CAP lemon tart recipe with you. But on a sunny Friday afternoon (and procrastinating a bit, I admit), I stumbled upon the latest episode of the Génération Do It Yourself podcast interviewing Nicolas Paciello, Pastry Chef at the Prince de Galles. An absolutely fascinating account of the reality of being a pastry chef (which we too often forget while watching TV shows) that I just had to share with you!
Nicolas talks about his beginnings as a young pastry chef in the provinces. Then, step by step, through hard work and dedication, failures and competition, his rise to the coveted position of Head Pastry Chef at the Prince de Galles. And having recently tried the afternoon tea there myself, I can tell you he fulfills the role 200%!
He speaks candidly about what it takes to be a great pastry chef and the sacrifices it requires. An inspiring journey for all pastry chefs — whether currently working or considering a career change — that I warmly recommend!
