Christophe Felder's Coconut Macaroons (Congolais)

Congolais are small French cakes made with shredded coconut. To prepare them, mix the coconut with sugar, egg whites, and a little flour. Form small mounds on a baking sheet and bake until lightly golden on the edges but still soft in the center. This simple pastry is known for its intense coconut flavor and its texture that is both crispy on the outside and tender on the inside. Congolais keep for several days in an airtight container and can be flavored with vanilla or rum for extra taste.
